Vinification: The grapes are hand-picked, and after destemming and crushing, fermentation with maceration takes place at a temperature of 24-26°C for approximately 15 days. During fermentation, to facilitate the extraction of phenolic substances from the skins, gentle daily punch-downs and some delestage operations are carried out, also aimed at aerating the must. At the end of alcoholic fermentation, the wine is racked, and the skins undergo soft pressing. During the grape processing stages, microorganisms are used to colonize the must, performing a bioprotective function against any unwanted microorganisms; this allows us not to use sulfites before and during alcoholic fermentation. Sulfites are only added at the end of alcoholic and malolactic fermentation.
Aging: 12 months in French oak barriques, 12 months in steel on the fine lees and 6 months in the bottle.
